Grilled Pineapple Pork Loin

Ingredients
- 3-4 lb boneless pork loin
Ingredients: Pineapple salsa
- 1/2 pineapple, diced (about 3 cups)
- 1/2 red onion, diced (about 1/2 cup)
- 1/2 red bell pepper, diced (about 1 cup)
- 1 jalapeno, diced
- 1/2 cup fresh cilantro, chopped
- 1/2 lime (to juice)
Ingredients: Homemade pork rub seasoning
- 1 1/2 tsp chili powder
- 1 1/2 tsp onion powder
- 1 1/2 tsp garlic powder
- 1 1/2 tsp dried oregano
- 1/2 tsp cinnamon
- 1 tsp kosher salt
- 1 tsp ground pepper
Directions
- Start the grill to preheat at medium-high heat or 425 degrees.
- Prepare the salsa by combining all ingredients into a medium bowl and place in the refrigerator.
- Prepare the rub (or use a pre-made rub mix). Pat the pork loin with paper towels to dry, and then sprinkle and pat the rub into the pork on all sides.
- Place the pork loin over indirect heat, directly on grill grates, and cook for 45-60 minutes (depending on size), flipping halfway through, until thermometer reads 145 degrees.
- Allow pork loin to rest for 10 minutes, then top with salsa and slice to serve.
