This peach caprese is a staple lunch for my summertime. And having extra peaches is a bonus for kid snacks or baby-led weaning. I like to grow my own basil plant through the summer to use for this salad which makes it fun to just walk outside and pluck a few leaves. Give it a try!

Peach Caprese

Baby-Led Weaning Suggestion: Halve a peach with skin still on for babies to handle and taste age 6 months+. As the baby gets older, you can begin slicing the peaches for easier eating.
Ingredients
- 18 oz fresh mozzarella, sliced
- 3-4 fresh basil leaves
- 1 peach
- 2 tsp balsamic glaze
- Salt and pepper
Directions
- Slice the peach and take out the pit. Slice the basil by twisting the leaves together and folding, and then slicing thin narrow strips into the folded leaves. Assemble the cheese, basil, and peach slices in a bowl. Drizzle with balsamic glaze and season with salt and pepper to taste.
This peach caprese is a delicious variation of my traditional Caprese Salad– another one of my lunch staples in the summertime!
