Caprese Salad

A classic salad that might not really be a salad, but one that I love nonetheless. This caprese salad is super-quick to whip up, yet it’s nutritious and protein packed for a full day ahead. Light and refreshing, this dish is perfect for a hectic summer day with busy kids.

Tip: Slice the basil by twisting the leaves together tightly, and then slice thin narrow strips into the bound leaves.

Time-Saver Hack: Store a few portions of tomatoes, basil, and mozzarella balls in a bowl for even quicker preparation throughout the week! Then simply top with balsamic glaze.


Ingredients

  • 8 oz fresh mozzarella cheese pearls
  • 10 oz cherry or grape tomatoes
  • 2 tsp balsamic glaze
  • 3-4 basil leaves, sliced
  • Salt and pepper to taste

Directions

  1. In a bowl, add in tomatoes, basil, and mozzarella balls. Drizzle with balsamic glaze and season with salt and pepper to taste.

That’s it! This recipe is super easy to throw together, and one of my go-to meals when I need a quick lunch between summer activities.
