Postpartum is such a rollercoaster… but this recipe for lactation cookies made my journey a little bit easier <3 And they taste delicious, too!

Lactation Cookies

Ingredients
- 1 1/2 c whole wheat flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 3/4 c peanut butter
- 1/2 c butter
- 1 c flax seed
- 1/2 c sugar
- 1/2 c brown sugar
- 3 tbsp Brewer’s yeast
- 1/3 c water
- 2 tsp vanilla
- 2 large eggs
- 2,500 mg Fenugreek *optional (open the capsule, pour in)
- 2 c chocolate chips
- 1 c chopped walnuts
- 1 3/4 c rolled oats
Directions
- Preheat oven to 350
- Combine flour, baking soda, cinnamon, and salt in a bowl
- Use mixer to beat peanut butter, butter, sugar, brown sugar, vanilla, yeast, flex, and water together until creamy
- Mix in eggs
- Gradually beat in flour mixture (and Fenugreek)
- Mix in nuts and chocolate chips
- Gradually mix in oats
- Place balls of dough onto buttered baking sheets and bake for 12 minutes
