Cranberry Feta Orzo

A colorful lunch dish that’s quick to prepare, has great protein to refuel during a hectic day, and stores and reheats well to enjoy all week long. This cranberry feta orzo tastes great cold as well as hot and takes such little effort for a grown-up taste (a dish that your kids won’t try to steal from you- hopefully).

Time-Saver Tip: Make the recipe in bulk to meal prep for the week- just double or triple it!

Ingredients

  • 1 cup orzo
  • 1 tbsp jarred pesto sauce
  • 1/4 cup cranberries
  • 1/4 cup feta cheese crumbles

Directions

  1. Cook orzo to al dente per box direction. Drain and return to the pot
  2. Stir in pesto until orzo is coated. Add in cranberries and 2 tbsp feta cheese crumbles
  3. Serve in a bowl sprinkled with remaining feta. Refrigerate any leftovers for up to 3 days
