A colorful lunch dish that’s quick to prepare, has great protein to refuel during a hectic day, and stores and reheats well to enjoy all week long. This cranberry feta orzo tastes great cold as well as hot and takes such little effort for a grown-up taste (a dish that your kids won’t try to steal from you- hopefully).

Cranberry Feta Orzo

Ingredients
- 1 cup orzo
- 1 tbsp jarred pesto sauce
- 1/4 cup cranberries
- 1/4 cup feta cheese crumbles
Directions
- Cook orzo to al dente per box direction. Drain and return to the pot
- Stir in pesto until orzo is coated. Add in cranberries and 2 tbsp feta cheese crumbles
- Serve in a bowl sprinkled with remaining feta. Refrigerate any leftovers for up to 3 days
