What I love about this recipe is that it “looks” so impressive with it’s presentation, but it’s SO easy to do! The idea of cooking Tilapia En Papillote is that the parchment paper seals together to steam the meal, and the tilapia then absorbs the flavor of the sautรฉed vegetables while the rice marinates perfectly as cooking. You then pull the parchment package out of the oven and place it directly on the plate to be cut open right at the table. Trรจs fancy.

Tilapia En Papillote

Ingredients
- 1 package Tilapia filets (2)
- Parchment paper
- Kitchen twine/string
- 1/4 carrot, julienned
- 1/4 onion, julienned
- 1/2 c frozen corn
- 1 c brown rice
- To season: chili powder, cumin, oregano, salt and pepper
Directions
- Preheat oven to 400 while cooking rice according to package
- Sautรฉ carrot, onion, and corn in oil until browned and soft
- Make two parchment pouches on a sheet pan
- Put 1/2 of rice in the bottom of each of the parchment paper pouches, and top with 1/2 vegetables
- Place tilapia on vegetables and season generously
- Close the pouch (kitchen twine or string may help in keeping it closed)
- Bake 10 minutes or until fish is done
