Easy Cheesy Corn Enchiladas

I first found a variation of this cheesy corn enchiladas recipe YEARS ago, on a frantic search to find a meal Alan and I both liked. We’re basically opposite in our taste preferences. He prefers the classic meat-and-potatoes situation and I prefer more pasta + vegetarian varieties. This one was a simple one to throw a rotisserie chicken into half, so he could get his meat-filled meal, and I left it out of my side. It’s mild enough to be family-friendly, but I’ve found even more variations through the years!


Easy Cheesy Corn Enchiladas

  • This is a MILD spicy meal, but some kids (and grown-ups๐Ÿ˜‰) still hate any spice. Subbing in mozzarella ๐Ÿง€ instead of pepper jack makes it completely un-spicy! We often do a half-and-half pan for kids and adults.
  • Sub in ground beef instead of chicken or leave chicken out completely for a vegetarian friendly meal!
  • To cook from frozen, place in oven at 350 for 55 minutes or until sauce is bubbling

Ingredients

  • 1 (10oz) can @oldelpaso mild red enchilada sauce
  • 8-10 burrito sized flour tortillas
  • 2 (15) oz cans of corn
  • 1/2 yellow onion- diced
  • 2 cups @crystalfarmscheese shredded pepper jack cheese
  • (sub 1 cup mozzarella for a no-spice side!)
  • 1/4 cup @kempscows heavy whipping cream
  • 2 tsp red pepper flakes
  • 1 rotisserie chicken- shredded (optional)

Directions

  1. Preheat oven to 350ยฐ and grease 9×13 baking pan
  2. Heat olive oil in pan and cook onion until translucent (2-3 minutes)
  3. Add in corn and red pepper flakes to lightly brown
  4. Add in heavy whipping cream, bring to a boil, and stir until thicker consistency.
  5. Assemble tortillas tightly packed into baking pan while adding in corn mixture, a layer of cheese, and chicken into each with facing downward into pan.
  6. Cover the rolled enchiladas with the can of sauce and sprinkle on remaining cheese
  7. Bake uncovered 20 minutes or until sauce is bubbling up on the sides
