The absolute BEST family-friendly grilled cheese and tomato soup combination. Fair warning, it will remind you of your own childhood. This tomato soup recipe brings all of the savory, creamy taste I love in a soup. But it’s easier than making soup from scratch. You can use any cheese, but even my picky eaters enjoy their grilled cheese with havarti. And the sourdough gives the sandwich that perfect, crunchy finish.

Classic Tomato Soup and Grilled Cheese

Ingredients: Grilled Cheese
- Sliced sourdough bread
- Havarti cheese, sliced
- Butter for toasting
Ingredients: Tomato Soup
- 2 cloves of garlic, minced
- 1 28 oz can fire roasted tomatoes
- 2 cups chicken broth
- 1/4 tsp chicken bullion
- 1 tbsp fresh chopped thyme, oregano, and chives
- 1 tsp salt
- 1 tsp pepper
- 1 cup half and half
- 1 tbsp butter
Directions
- In a large pot, heat oil over medium high heat and add minced garlic until fragrant and golden brown. Add all other ingredients, bring to a light boil, and stir to combine. Bring heat to simmer and use an immersion blender to blend soup into a uniform and smooth consistency.
- At the same time, assemble grilled cheese with butter on the outside of each bread slice, and havarti cheese in the middle. Place sandwiches in panini press (or on a griddle or pan on stovetop) until each side is golden brown and cheese is melty and oozing from middle.
- Serve warm and enjoy the classic, buttery taste that kids and adults will all love!
