Mini Corn Dog Muffins

I am always running out of snack ideas for after school, and this mini corn dog recipe is just full of those comfort food flavors.

Ingredients

  • 1 pkg honey cornbread mix
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 egg
  • 3-5 hotdogs, cut into 1 inch pieces
  • Popsicle sticks (optional)

Directions

  1. Preheat the oven to 350, and spray a mini muffin pan.
  2. Make the honey cornbread mixture following the directions on the back, and pour into muffin cups, filling halfway.
  3. Press hotdog pieces into popsicle sticks (optional) and press into each muffin cup.
  4. Bake for 15-20 minutes, watching for the tops to be golden brown and cooked through.
  5. Remove carefully, and serve!
