Bottom Round Roast with Herb Butter

This is the easiest roast recipe I’ve ever found, and is so perfect for get togethers or holidays with family. It’s filling and delicious with tons of flavor, but so easy to make!

Bottom Round Roast with Herb Butter

Ingredients: Roast

  • 5 lbs bottom round roast
  • 1 tbsp kosher salt
  • 2 tsp pepper
  • 2 tsp mustard powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp oil

Ingredients: Compound butter

  • 3 tbsp butter, softened
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried thyme

Directions

  1. Preheat oven to 450.
  2. In a small mixing bowl, combine the roast spices and seasoning. Cover roast evenly with a thin coat of oil followed by seasoning blend. Place in a roasting pan fitted with a rack.
  3. Cook 15 minutes, drop the oven temperature to 325 and continue roasting 1 1/2 hours, or until the internal temp reaches 125.
  4. Prepare herb butter. In a small mixing bowl combine softened butter, basil, oregano, and thyme. Set aside to keep soft.
  5. Remove roast from oven and allow it to rest 15 minutes in the pan. Transfer to a large carving board and smear evenly with herbed butter. Slice and serve.
