Listen, I know how some people feel about crock pot meals, but they can be such a life saver. And they make amazing food, too! The pork cooks slowly throughout the day while you work on other things, and gives you much more time to prepare the rest of the ingredients instead of scrambling at dinner time. Bonus: it reheats well, too! So make a big batch and save some pork carnitas for leftovers for the next day.

Pork Carniats

Ingredients
- 2 lb pork loin or roast
- 2 tbsp chili powder
- 1/4 cup chicken broth
- 1 diced carrot
- 1/2 diced onion
- 12 8-inch white corn tortillas, warmed
Directions
- Combine carrot, onion, and broth in slow cooker.
- Sprinkle roast on all sides with chili powder and rub into the meat. Place in slow cooker fat-side facing up, and cook on high for 6 hours, until roast is falling-apart-tender. 3.Shred meat into bite sized pieces and moisten with cooking juices to taste. Cover to keep warm.
- Fill tortillas with pork, cabbage mixture, avocado, and serve, or arrange each ingredient on a platter for guests to make their own.
Ingredients for cabbage slaw
- 4 cups red cabbage, thinly sliced
- 3 tbsp mayonnaise
How to make cabbage slaw
- In a medium bowl, combine cabbage and mayonnaise. Season with salt and pepper to taste.
