Easy Chicken Pot Pie

When Wisconsin has a cold front, that means one thing to me: comfort food. Chicken pot pie is the ultimate comfort food, and for this recipe, I decreased almost ALL amounts of actual cooking, took out all the “yucky”-deemed veggies and made it as easy and simple as possible with a homemade comforting taste. But the best part? It makes TWO- one to freeze for a busy weeknight or gift to an expecting mom friend.


Easy Chicken Pot Pie

To cook from frozen: Cook at 425 while covered loosely for 30 minutes, reduce heat to 350 and bake for additional 75 minutes or until internal temperature is 165.

Ingredients

  • 2 cups diced, peeled potatoes
  • 2 sticks unsalted butter, cubes
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp thyme
  • 1 tsp pepper
  • 3 cups low-sodium chicken broth
  • 1 1/2 cups whole milk
  • 1 shredded rotisserie chicken
  • 1 cup frozen peas
  • 1 cup frozen diced carrots
  • 1 cup frozen corn
  • 2 pkgs/4 sheets refrigerated pie crust

Directions

  1. Preheat oven to 425. Place diced potatoes in a large saucepan and cover potatoes in water. Bring to a boil, reduce heat, and cook covered for 10 minutes until tender- drain and set to the side.
  2. In the same skillet, heat cubed butter over medium heat to melt. Mix flour with seasonings and stir into the butter with a whisk until fully blended. Gradually stir in broth and milk while mixing. Bring to a boil, stirring constantly until thickened. Then stir in chicken, peas, corn, and potatoes. Simmer.
  3. Unroll two pie crusts into two pie plates and form into dish. Pour filling equally into each dish. Then place remaining two crusts on tops. Press to seal and flute edges, trim edges, and cut slits into tops.
  4. If freezing, cover in foil and freeze or bake 35 minutes or until crust is golden brown.
