Weeknight meals for the family can be tricky. With back-to-school season in full swing, it’s certainly helpful to have some easy go-to ideas. We recently tried mixing up our usual fish-stick routine with this Fish Stick Po’ Boy meant for the whole family and I obviously HAD to share it!

If you know me, you know that my top priorities in meals are usually: simple to make, don’t take a long time, are crowd-pleasers for everyone in the family to enjoy together.

Long gone are the days of fish sticks on a divided plate shared with peas and French fries because this quick and simple meal spices up a staple that we always have on hand (Gorton’s Fish Sticks). (And makes it an impressive meal that even my husband could look forward to)
Fish Stick Po' Boys

There are two main components to the meal: the ingredients that need assembly and the homemade garlic aioli. (It sounds way harder to make than it is, I promise.)
Sandwich Ingredients
- Gorton’s Fish Sticks (4-5/sandwich)
- Hoagie Rolls or Brioche Buns
- Iceberg lettuce, shredded
- Tomato, sliced
Aioli Ingredients
- 1/2 cup mayonnaise
- 1 tsp garlic paste
- 1/2 lemon, squeezed
To Make The Aioli
- Combine mayonnaise and garlic paste in a small dish
- While slowly squeezing the lemon, stir the mixture with a fork to emulsify it
- Continue stirring until the mixture is uniform in texture and appearance
Sandwich Assembly
- Prepare the ingredients: chop the lettuce, slice the tomato, and toast the hoagie rolls (I recommend adding butter to the tops in order to make it crispier)
- Spread a generous amount of aioli on the top of the bottom bun
- Then spread lettuce evenly over the covered bun
- Add tomatoes if desired
- Lay fish sticks diagonally across the sandwich
- Finally place the top bun to finish, and enjoy!
