Postpartum is such a rollercoaster… but this recipe for lactation cookies made my journey a little bit easier <3 And they taste delicious, too!

Ingredients

  • 1 1/2 c whole wheat flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 3/4 c peanut butter
  • 1/2 c butter
  • 1 c flax seed
  • 1/2 c sugar
  • 1/2 c brown sugar
  • 3 tbsp Brewer’s yeast
  • 1/3 c water
  • 2 tsp vanilla
  • 2 large eggs
  • 2,500 mg Fenugreek *optional (open the capsule, pour in)
  • 2 c chocolate chips
  • 1 c chopped walnuts
  • 1 3/4 c rolled oats

Directions

  1. Preheat oven to 350
  2. Combine flour, baking soda, cinnamon, and salt in a bowl
  3. Use mixer to beat peanut butter, butter, sugar, brown sugar, vanilla, yeast, flex, and water together until creamy
  4. Mix in eggs
  5. Gradually beat in flour mixture (and Fenugreek)
  6. Mix in nuts and chocolate chips
  7. Gradually mix in oats
  8. Place balls of dough onto buttered baking sheets and bake for 12 minutes
