Mini Sausage Egg Bites

These sausage egg bites are perfect for the family on busy weekday mornings. Bonus: you can freeze them for later, too!

Ingredients

  • 1 pkg sausage links
  • 1/2 diced onion
  • 1 1/2 c egg whites
  • 1/4 tsp chili powder
  • 1/2 diced pepper
  • 1 c shredded cheddar cheese

Directions

  1. Preheat oven to 350 degrees, spray muffin pan with nonstick spray, and dice onion and pepper.
  2. Brown sausage links in a skillet, over medium-high heat. Add diced onion into skillet, cooking until translucent. Set to the side to cool.
  3. Add 1 1/2 cups liquid egg whites into a bowl with chili powder, diced pepper, and shredded cheese, stirring to combine.
  4. Using a ladle or measuring cup, spoon the egg mixture into muffin cups until 3/4ths full. Cut sausage links into bite-sized pieces and add 2-3 into each muffin cup, making sure not to overfill.
  5. Bake at 350 for 20 minutes or until eggs are set and cheese has formed a crust. Serve warm or freeze by placing cooled bites into a freezer-safe bag. (Reheat from frozen by thawing for 1 minute, then heating for another minute.)
