Cheesy Potatoes

Every family gathering has that person that brings kale salad with homemade dressing.. and I am not that person. So if you’re not either, here’s a perfect side dish to bring that everyone will love. These cheesy potatoes are great for any holiday or get together and reheat well, too!

Cheesy Potatoes

You can prep these cheesy potatoes ahead of time too and either stick it in the fridge or freezer to finish– which is the bessstt hack for if you’re hosting and busy with company!

Ingredients

  • 60 oz bag (or 2 30 oz) frozen hashbrowns, thawed
  • 2 cups/16 oz sour cream
  • 1-2 cans cream of chicken soup
  • 1 stick melted butter
  • 2-3 tsp onion salt
  • 2-5 cups cheddar cheese
  • 2-3 cups crushed Special K cereal

Directions

  1. Preheat oven to 350.
  2. Combine all ingredients in mixer, leaving out cereal for topping.
  3. Spread evenly into a 9×13 greased dish.
  4. Layer on an even top of crushed Special K cereal and more shredded cheese.
  5. Bake for 30-40 minutes until bubbling up and there’s a golden brown crispy top.
