Fruit Pizza

The year is 2017. A very, very, 40-week pregnant Kyla is so determined to have a fruit pizza for the 4th of July. Think of it as a pregnancy craving PLUS a seasonal/holiday craving. It was EX-TRA. I spent all day making my own crust from scratch, rolled it into a pizza tin, baked it perfectlyโ€ฆand then realized that the pizza pan had holes in it in which the dough baked through and the cookie crust could not separate from the pan and the entire thing went in the garbage.
There were tears. ๐Ÿ˜…๐Ÿ˜ญ๐Ÿ˜ญ
And from there on out, I’ve vowed to only buy sugar cookie dough and ALWAYS buy two rolls. So when I say this recipe is fool-proofโ€ฆ I swear it’s fool-proof. ๐Ÿ˜‰


Fruit Pizza

Ingredients

  • Sugar Cookie Dough (@pillsbury in a tube)
  • 1 pkg Cream Cheese
  • 1/2 c sugar
  • 1 tbsp vanilla
  • Various fruits (bonus points for red and blue ones)

Directions

  1. Preheat the oven to the temp on the cookie dough roll.
  2. Roll out the sugar cookie dough on a pan- can be square, pizza pan, bean shaped, whatever (no holes, though๐Ÿ˜‚๐Ÿ˜ญ)
  3. Then bake it for around 15 minutes- watch for the edges turning golden brown and error on the side of under-done
  4. In a mixer, combine cream cheese, sugar, and vanilla and whip until it’s making peaks and looks easily spreadable
  5. Let cookie crust cool completely and then spread on the frosting mixture
  6. Layer cut fruits on top (perfect time to let the kids help while you try to not care that it doesn’t make a symmetrical design)
  7. Store in the fridge until serving!
