There’s just something fancy about a stuffed chicken. This meal makes a perfect date night at home for when the kids are in bed. The brie, basil, and ham provide complimentary flavors that create a filling, but light experience. Enjoy this dish with your favorite sides, such as roasted baby red potatoes or a pan-fried green bean.

Brie Stuffed Chicken with Basil and Ham

Ingredients
- 2 chicken breasts
- 2 thin deli ham slices
- 3-4 fresh basil leaves
- 1 brie cheese round
- 1 tsp extra virgin olive oil
- Salt and pepper to taste
Directions
- Hollow the center of each chicken breast by cutting a knife into the thicker top side of breast around 3-4 inches in length to form a pocket.
- Cut two thin slices of the brie to the length of the chicken breast. Lay out two slices of ham, and place basil and brie cheese on top. Then roll the ham, basil, and brie together and stuff into the chicken breast pocket. Season with salt and pepper.
- Over medium-high heat, add oil to the frying pan and sear both sides of the stuffed chicken breasts until lightly browned.
- Place the seared chicken breasts into an oven-safe baking dish and broil on high for about 20 minutes, or until the internal temperature of the chicken reaches 165.
- Finally serve with your favorite side dish, and enjoy!
