If I’m being honest, I had about twenty grilled cheese variations I thought about whipping up. Being from Wisconsin, cheese is something I take pretty seriously. This version was the winner because of the creaminess of the avocado and the crispiness of the bacon, along with the perfectly melty goodness of butterkase (Wisconsin’s amazing butter-cheese). If you’ve never tried it, it’s a must. And, the more cheese, the better! You can, of course, substitute the avocado and bacon for other ingredients, but this variation of grilled cheese is a personal favorite.

Bacon Avocado Grilled Cheese

Ingredients
- 3 pieces of cooked, crispy bacon
- 1/2 avocado, sliced
- 1 slice butterkase cheese
- 1 slice sharp cheddar cheese
- 2 slices sourdough bread
- 1 tbsp butter
Directions
- Assemble the sandwich with bacon, avocado, butterkase, and sharp cheddar inside of it
- Spread butter on the outer sides of the sourdough
- Cook in panini press or in frying pan over medium-high heat, turning once bread is golden brown and cheese begins to melt
- Slice in half to serve.
This sandwich pairs perfectly with a good, classic kettle chip!
