Buttered Noodles Parmesan with Breaded Chicken

Making a dinner that keeps the whole family happy isn’t always easy, but there’s not one person who can’t find something to enjoy in this meal. The crisp chicken is the perfect compliment to the buttered noodles for a family-friendly meal that will surely join your weekly rotation.


Buttered Noodles Parmesan with Breaded Chicken

Ingredients

  • 1 12 oz package of extra-wide egg noodles
  • 1 tbsp butter
  • 5 oz container of shredded parmesan (not grated) or freshly shredded parmesan
  • 2 chicken breasts
  • 1 c panko breadcrumbs
  • Salt and pepper to taste
  • 2 eggs
  • 1/2 c flour
  • 1 tsp parsley flakes

Directions

  1. Halve the chicken to create 4 thin breasts and place each breast between parchment or wax paper to tenderize.
  2. Cook the noodles to package directions.
  3. While cooking noodles, add salt and pepper to panko breadcrumbs in a shallow dish. In separate dishes, add flour to one and the eggs, mixed to combine yolks, to the other so that you have three separate shallow dishes with ingredients. Then dredge the chicken in the egg, then the flour, and then the breadcrumbs ensuring it’s fully submerged or covered at each step.
  4. Place oil in a skillet over medium-high heat. Once the oil is beading from pan heat, add the chicken. Cook 3-5 minutes on each side until golden brown and cooked through. Then set to the side and slice or cut into squares.
  5. Drain the noodles. Then return noodles to pot along with butter. Stir to melt butter and cover noodles.
  6. Finally, scoop noodles onto plates to serve. Top with parmesan cheese, parsley flakes, and cut chicken.
