Saturday Morning Pancakes

Saturday morning in the Charles home is always delicious because of Alan’s pancakes! Make the pancake mix and have it ready to scoop for a fast prep for a pile of pancakes. We like to add chocolate chips, but you can be the boss of your toppings.

Instant Pancake Mix

  • 12 cups all-purpose flour
  • 3 tsp baking soda
  • 6 tsp baking powder
  • 2 tbsp kosher salt
  • 4 tbsp sugar

Pancakes

  • 2 eggs
  • 2 cups whole milk
  • 4 tbsp melted butter
  • 2 cups pancake mix from above
  • Any toppings

Directions

  1. Heat a frying pan over medium heat, and preheat the oven to 200
  2. Whisk together milk, egg, and melted butter until combined, and then pour over 2 cups of pancake mix in a bowl. Mix batter together until just combined (lumps are okay). Let it set for a few minutes
  3. Put a slice of butter on the hot frying pan and scoop 1/2 cup of the batter directly on the frying butter
  4. Add in toppings if desired (chocolate chips are our favorite, but you can add in blueberries, strawberries, bananas, or walnuts)
  5. Once the pancake is starting to bubble and golden brown on the down side, flip to the other side and continue to cook until matching doneness, 3-5 minutes
  6. Place done pancakes onto a baking sheet in the oven until all pancakes are done
