Weeknight meals for the family can be tricky. With back-to-school season in full swing, its helpful to have some easy go-to ideas. We recently tried mixing up our usual fish-stick routine with a meal meant for the whole family and I HAD to share it!
Long gone are the days of fish sticks on a divided plate shared with peas and French fries. This quick and simple meal spices up a staple that we always have on hand (Gorton’s Fish Sticks) and makes it an impressive meal that even my husband could look forward to.
Fish Stick Po’ Boys
There are two main components to the meal: the ingredients that need assembly, and the homemade garlic aioli. (It sounds way harder to make than it is, I promise.)
For the sandwich:
Gorton’s Fish Sticks (4-5 per sandwich)– my favorite way to cook these is in the air fryer!
Hoagie Rolls or Brioche Buns
Iceberg lettuce, shredded
Tomato, sliced
For the aioli:
1/2 cup mayonnaise
1 tsp garlic paste
1/2 lemon, squeezed
To make the aioli:
Combine the mayonnaise and garlic paste in a small dish. Take a fork, and while slowly squeezing the lemon, stir the mixture in order to emulsify it. Continue stirring until it is uniform in texture and appearance.
To assemble the sandwich:
1. Prepare the ingredients: chop the lettuce, slice the tomato, and toast the hoagie rolls (I recommend adding butter to the tops)
2. Spread a generous amount of aioli on the top of the bottom bun
3. Spread lettuce evenly over the covered bun
4. Add tomatoes if desired
5. Lay fish sticks diagonally across the sandwich
6. Place the top bun to finish, and enjoy!
My favorite part of this super-quick meal is that it can easily be adjusted for any serving size, so if you have company you can adjust accordingly– same as if you’re only eating as two!
